Green Salad Marinated Portabella Steaks



This vegan recipe combines hearty portabella mushroom steaks with a refreshing green salad for a delicious and satisfying meal. The portabellas are marinated in a flavorful balsamic soy sauce mixture, then grilled to perfection and served atop a bed of mixed greens, cherry tomatoes, cucumber, red onion, and black olives. Finish it off with a tangy balsamic vinaigrette dressing for a burst of flavor in every bite!

Ingredients:

  • 4 large portabella mushroom caps
  • 1/4 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumber
  • 1/4 cup sliced red onion
  • 1/4 cup sliced black olives
  • 1/4 cup balsamic vinaigrette dressing

Instructions:

In a small bowl, whisk together balsamic vinegar, soy sauce, olive oil, minced garlic, dried thyme, salt, and pepper

Place portabella mushroom caps in a shallow dish and pour marinade over them

Let them marinate for at least 30 minutes, turning once halfway through

Preheat grill or grill pan over medium-high heat

Grill marinated portabella mushroom caps for 5-6 minutes on each side, or until tender and slightly charred

While portabella steaks are grilling, prepare the salad by tossing mixed greens, cherry tomatoes, sliced cucumber, red onion, and black olives in a large bowl

Divide the salad among plates, top each with a grilled portabella steak, and drizzle with balsamic vinaigrette dressing

Serve immediately and enjoy!
