General Tso's Chicken



General Tso's Chicken is a well-known Chinese-American dish that tastes sweet, savory, and just a little spicy. It has pieces of crispy chicken tossed in a sour sauce made from honey, soy sauce, vinegar, and hoisin sauce.

Ingredients:

  • 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup chicken broth
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds optional
  • Cooking oil for frying

Instructions:

Toss the chicken pieces in cornstarch in a bowl until they are well covered

The sauce is made by mixing soy sauce, rice vinegar, hoisin sauce, sesame oil, honey, garlic, ginger, and red pepper flakes in a different bowl

In a pan, heat the oil over medium-high heat

Fry the chicken until it's golden brown and fully cooked, which should take about 5 to 6 minutes

Take it off and let it dry on paper towels

Set aside a second pan and add one tablespoon of oil to it

After you add the green onions, cook for one to two minutes

Put the chicken broth and the sauce mix into the pan

Bring to a simmer and cook for two to three minutes, or until the sauce gets a little thicker

Pour the sauce over the fried chicken and toss it around to cover it all

Add one to two more minutes of cooking

If you want, you can sprinkle sesame seeds on top and serve hot

Salmon Avocado Club Burger



Enjoy a delicious salmon and avocado club burger with a Greek yogurt sauce that will make your mouth water. This burger has just the right amount of flavors and textures to make it a great treat for any event.

Ingredients:

  • 1 lb fresh salmon fillet, skinless
  • 1 ripe avocado, sliced
  • 4 whole grain burger buns
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Lettuce leaves
  • Tomato slices
  • Red onion slices
  • Crispy bacon strips

Instructions:

Warm up the grill over medium-high heat

Add salt and pepper to the salmon fillet

If you use a fork, the salmon should be easy to flake after about 4 to 5 minutes on each side

Add Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper to a bowl and mix them together to make a creamy sauce

Grill the salmon after that

Put the whole grain burger buns on the grill and toast them for one minute, or until they get a little brown

Take the salmon off the grill when it's done and let it rest for one minute

Put the creamy sauce on the bottom halves of the buns that have been toasted

Cover the sauce with a lettuce leaf and then add a slice of grilled salmon

On top of the salmon, put slices of avocado, tomato, red onion, and crispy bacon

To finish the burger, put the top half of the bun on top of the stack

Crock-Pot Black Bean Soup



A hearty and flavorful black bean soup cooked to perfection in a Crock-Pot, featuring a blend of spices and colorful vegetables. Serve with zesty lime and creamy sour cream for a delightful experience.

Ingredients:

  • 1 lb dried black beans, rinsed and soaked overnight
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can 14 oz diced tomatoes
  • 1 cup corn kernels
  • 1 jalapeno, seeded and chopped
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving
  • Sour cream, for serving

Instructions:

Black beans that have been soaked should be put in the Crock-Pot along with diced tomatoes, corn, jalapeo, cumin, chili powder, and smoked paprika

Season with salt and pepper and then pour the vegetable broth over the food

Cover, stir everything together well, and cook on low for 8 hours, or until the beans are soft

If you need to, adjust the seasonings and pour the soup into bowls before serving

Serve with lime wedges and a dollop of sour cream and chopped cilantro on top

  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved

Instructions:

Bacon-Garlic Chicken



Bacon-Garlic Chicken is a delicious dish made with juicy chicken breasts and the savory flavors of bacon and garlic. It's simple to make and tastes great for dinner!

Ingredients:

  • 4 chicken breasts
  • 8 slices of bacon
  • 4 cloves of garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Preheat oven to 375F 190C

Season chicken breasts with salt and pepper

Wrap each chicken breast with 2 slices of bacon, securing with toothpicks if necessary

Heat olive oil in an oven-safe skillet over medium-high heat

Add minced garlic to the skillet and cook for 1-2 minutes until fragrant

Place bacon-wrapped chicken breasts in the skillet and sear for 2-3 minutes on each side until bacon is partially cooked

Transfer skillet to the preheated oven and bake for 20-25 minutes or until chicken is cooked through and bacon is crispy

Remove toothpicks before serving

Raspberry Meringue Torte Cookies



Delicate almond meringue cookies with a burst of raspberry flavor, topped with a touch of dark chocolate and sliced almonds. A perfect combination of textures and flavors.

Ingredients:

  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh raspberries, crushed
  • 1/4 cup dark chocolate, melted
  • 1 tablespoon sliced almonds

Instructions:

Preheat the oven to 300F 150C and line a baking sheet with parchment paper

In a bowl, mix almond flour and powdered sugar until well combined

In a separate bowl, beat egg whites and cream of tartar until soft peaks form

Gradually add granulated sugar while continuing to beat until stiff, glossy peaks form

Gently fold in the vanilla extract and crushed raspberries into the meringue

Spoon small rounds of the meringue onto the prepared baking sheet

Bake for about 25-30 minutes or until the meringue cookies are crisp and dry

Let the cookies cool completely on a wire rack

Once cooled, drizzle melted dark chocolate over the cookies
