Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup ice water
- 1 cup fresh blueberries
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
Instructions:
Preheat oven to 375F 190C
In a food processor, pulse together flour and salt
Add diced butter and pulse until mixture resembles coarse crumbs
While pulsing, gradually add ice water until dough comes together
Press dough into a 9-inch tart pan, covering the bottom and up the sides
Trim excess dough
In a bowl, toss blueberries with 1/4 cup flour until coated
Spread them over the tart crust
In another bowl, whisk together sugar, eggs, buttermilk, and vanilla extract until smooth
Pour the buttermilk mixture over the blueberries
Bake in the preheated oven for 35-40 minutes, or until the filling is set and the crust is golden brown
Allow the tart to cool before slicing and serving
