Ingredients:
- 1 lb gnocchi
- 6 slices bacon, chopped
- 2 cups arugula
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes optional
- Olive oil for cooking
Instructions:
Follow the directions on the package to cook the gnocchi
Remove the water and set it aside
Boil chopped bacon in a big pan over medium-low heat until it gets crispy
Take the bacon out of the pan and pat it dry on paper towels
Leave the bacon grease in the pan
When you add minced garlic to the pan with bacon grease, cook for one to two minutes, until the garlic smells good
When you add the cooked gnocchi to the pan, toss it around to coat it with the garlic and bacon grease
Put the cooked bacon back into the pan and mix it all together
Put the arugula in the pan and cook it for one to two minutes, until it starts to wilt
You can add red pepper flakes, salt, and pepper to taste
On top, grate the Parmesan cheese and mix everything together
Take it off the heat and serve right away
