Orange, Apricot, and Carrot Couscous



This vibrant couscous salad combines the sweetness of orange and apricot with the earthiness of carrots, creating a delightful and healthy dish. It's perfect as a side or a light meal on its own.

Ingredients:

  • 1 cup couscous
  • 1 cup orange juice
  • 1/2 cup dried apricots, chopped
  • 1/2 cup grated carrots
  • 1/4 cup sliced almonds
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley leaves for garnish

Instructions:

Get the orange juice boiling in a small pot

Put the couscous in a bowl that can handle heat and pour the hot orange juice over it

Put the lid or plastic wrap on top of the bowl and leave it alone for 5 minutes

Use a fork to fluff up the couscous and separate the grains

Put the couscous, chopped dried apricots, grated carrots, and sliced almonds in a large bowl

Add the honey, ground cumin, salt, and pepper to a different small bowl and mix them together using a whisk

Add the dressing to the couscous and toss it all together until it's well covered

Add fresh parsley leaves as a garnish and serve right away
