Ingredients:
- 8 oz spaghetti
- 2 Vidalia onions, thinly sliced
- 1 cup grape tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh basil leaves, for garnish
- Grated Parmesan cheese, for serving
Instructions:
Cook spaghetti according to package instructions until al dente
Drain and set aside, reserving some pasta water
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut until fragrant
Add thinly sliced Vidalia onions to the skillet and cook until they become translucent and slightly caramelized
Add halved grape tomatoes to the skillet and cook for a few minutes until they begin to soften
Season the mixture with salt and pepper to taste
Add the cooked spaghetti to the skillet and toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce
Garnish with fresh basil leaves and serve hot, topped with grated Parmesan cheese
