Paleo Chocolate Mint Truffles



Indulge in the deliciousness of chocolate and mint with these Paleo-friendly truffles. They are a perfect treat for any occasion and adhere to the Paleo diet guidelines.

Ingredients:

  • 1 cup raw cashews
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons coconut oil
  • 2 tablespoons honey or maple syrup for strict Paleo
  • 1/2 teaspoon peppermint extract
  • Pinch of sea salt
  • 1/4 cup unsweetened shredded coconut, for coating

Instructions:

Place the raw cashews in a food processor and blend until they become a fine, crumbly texture

Add the cocoa powder, coconut oil, honey or maple syrup, peppermint extract, and a pinch of sea salt to the food processor with the cashews

Blend all the ingredients together until a sticky dough forms

Scoop out small portions of the dough and roll them into bite-sized truffle balls with your hands

Roll each truffle ball in the unsweetened shredded coconut to coat it evenly

Place the coated truffles on a plate or baking sheet lined with parchment paper

Chill the truffles in the refrigerator for at least 30 minutes to firm up

Once chilled, they are ready to serve
