Ingredients:
- 1 cup raw cashews
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons coconut oil
- 2 tablespoons honey or maple syrup for strict Paleo
- 1/2 teaspoon peppermint extract
- Pinch of sea salt
- 1/4 cup unsweetened shredded coconut, for coating
Instructions:
Place the raw cashews in a food processor and blend until they become a fine, crumbly texture
Add the cocoa powder, coconut oil, honey or maple syrup, peppermint extract, and a pinch of sea salt to the food processor with the cashews
Blend all the ingredients together until a sticky dough forms
Scoop out small portions of the dough and roll them into bite-sized truffle balls with your hands
Roll each truffle ball in the unsweetened shredded coconut to coat it evenly
Place the coated truffles on a plate or baking sheet lined with parchment paper
Chill the truffles in the refrigerator for at least 30 minutes to firm up
Once chilled, they are ready to serve
